our exo does not seem to have a ~/.config/xfce4/helpers.rc

so how do i switch the terminal Thunar opens?

Official packages generally don't touch the home directory, exo is no exception. Create ~/.config/xfce4/helpers.rc manually and add that TerminalEmulator property.
