I don't remember having to do anything to disable pulse when I switched to pipewire, just out of curiosity when pacman asked you if you wanted to remove the conflicting packages, did you hit 'y' or just hit enter? Hitting enter would be a 'N' so the conflicting packages wouldn't be removed.
To answer your question you can disable a dinit service with this:
dinitctl disable <service>
This will show more command options:
dinitctl --help
You can find what the pulse service is called by looking in /etc/dinit.d/
As far as starting pipewire with dinit there's a few threads on this forum on how to do that, like this one:
