ZFS install question

How do I get a ZFS pool under luks2 FDE properly? Ive looked into it, and the minute a ZFS guide says about fde, it's dismissed due ESP needing to be unencrypted, with no further useful help. But what all the guides seem to forget, FDE means end-to-end Encryption, from 34 bytes to the very end...that doesn't affect having an ESP/EFI on a flash drive 1 bit, take the flashdrive out bye bye access to the computer until it's reinserted, truly bulletproof, but my problem is I know BTRFS & FDE blindfolded, but I  know little about zfs or pools, and I wanna give it a shot if at all possible, I just don't understand why you can't mount a pool like you do a subvolume. Any help, advice or guidance would be deeply appreciated.
