z590 and i7-11700k freezing

I do this thing called GPU passthrough and I’ve been having an issue where the whole pc freezes when I boot up my VM and I also have been just experiencing stability issues when I'm on this platform

Most certainly a kernel bug. Try linux-lts or linux-zen?
