Yeah - did you try it as root?
I did yeah, there was no output in the terminal


so you ran sudo dmesg and nothing showed up in your terminal?NAME
       dmesg - print or control the kernel ring buffer

No, I ran

didnt help when the system was acting up, but the output of dmesg is different this time, looks ufw related?

Yeah, I'm aware ufw is my firewall. Strange thing is that despite running and configuring it, it won't launch at  boot. But according to dmesg, these times where I lose networking, it is launching at boot but misconfigured? Any idea what's going on?

Honestly, no I don't know any more than that.  I would start debugging it, one step at a time.  First take it down and remove it.  They reinstall it fresh with a simple configuration, and go from there.
